🎄Ingredients:

• 200g organic whole wheat flour
• 100g organic almond flour
• 1 tsp. gl. Organic baking powder
• 1/2 tsp soda
• 1/4 tsp. gl. salt
• 120g organic agave syrup
• 100ml plant based oat drink
• 80ml organic orange juice
• Zest of 2 organic oranges 
• 50ml organic virgin coconut oil (melted)
• 1 tsp organic vanilla extract
• 1 tablespoon organic apple cider vinegar
• 50g chopped organic walnut
• 2 tablespoons organic cranberries

Cocoa Chocolate Topping:

•  150g Vegan Couverture 100% Cocoa
• 1 tsp. Soup Organic Coconut Oil
• 1 tsp. Soup organic agave syrup (optional, for sweeter taste)

Decoration:

• Grated organic coconut 

Instructions for the New Year's Cake:

1. Preparation:
   Preheat the oven to 180°C (356°F) and grease a cake pan or baking tray. If desired, place parchment paper at the bottom.
2. Mixing wet ingredients:
   In a bowl, mix the oat milk, orange juice, zest, agave syrup, melted coconut oil, vanilla extract, and apple cider vinegar.
3. Mixing dry ingredients:
   In another bowl, combine the whole wheat flour, almond flour, baking powder, baking soda, and salt.
4. Combining:
   Combine the wet and dry ingredients gently using a spatula. Add in the chopped walnuts and cranberries.
5. Baking:
   Pour the mixture into the prepared pan and place the wrapped coin inside. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.

Instructions for the Topping:

1. In a bain-marie, melt the cocoa chocolate together with the coconut oil, stirring until the mixture is smooth.
2. If you prefer a milder sweet flavor, you can add agave syrup (optional).

Topping the New Year's Cake:

1. Place the cake on a wire rack with a tray underneath.
2. Pour the melted chocolate on top of the cake, allowing it to evenly coat the surface and sides.

Decoration:

If desired, add decorations such as chopped walnuts, cranberries, or shredded coconut on top of the chocolate before it sets.
