Vegan Burrito with Broccoli and Tofu

Materials:

Execution:

  1. Tofu Marinade: In a bowl, combine the tofu with the soy sauce, olive oil, garlic, ginger, salt and pepper. Let it marinate for at least 15 minutes.
  2. Sauté: In a frying pan, add a little olive oil and sauté the onion over medium heat until transparent (about 3-4 minutes). Add the marinated tofu and fry for 5-7 minutes, until golden brown.
  3. Add Vegetables: Add the broccoli and grated carrot to the pan and continue frying for another 5-7 minutes, until the vegetables are tender.
  4. Burrito Assembly: Heat the tortillas in a pan for 1-2 minutes, until they become more flexible. Place 1/4 of the filling in the center of each tortilla. Fold the edges of the tortilla and roll to close the burrito.
  5. Serving: Serve immediately, garnishing with fresh coriander if desired. You can accompany with soy sauce or a vegan tahini sauce.
