This is Kyoto style miso, made from fermented rice and whole soybean puree, with a wonderful creamy consistency and slightly salty sweetness, known for its rich nutritional value.
It is made in small batches to preserve its special quality. Thanks to the traditional fermentation process, it maintains unchanged its nutritional properties such as the high content of proteins, vitamins and minerals. Made with organic ingredients and handcrafted koji, full of powerful enzymes, used to break down the beans and seeds. Its light color may darken with time but this is natural and does not alter the taste.
Add to mashed potatoes instead of milk or to creamy soups instead of cream. It binds wonderfully with oil and vinegar and lends a spicy yet sweet flavor to stews, soups and spreads.
Keep it in a cool and dry place. Refrigerate after opening and consume within 2 months.
Βlend with oils and vinegars or dilute with cooking liquid.
