Miso is a traditional Japanese food, rich in nutrition, made through a special fermentation of soybeans and a microorganism called koji.
Clearspring Miso is made from organic whole soybeans and handcrafted koji, full of powerful digestive enzymes, used to break down the soybeans. Hatcho Miso is still made slowly and authentically as tradition dictates. The soybeans are fermented and matured in cedar barrels, with various seasonings, for 3 whole years. Slow aging and traditional fermentation create a rich and complex aroma while preserving Miso's rich nutritional properties, such as its high protein, vitamin and mineral content.
Keep it in a cool and dry place. After opening keep in the refrigerator in an airtight container for about 6 months.
One teaspoon of Hatcho Miso will season about one cup of liquid. Dilute in a little cooking liquid then add toward the end of cooking.
