Keep in a cool, shady and dry place.
Wash one cup of sushi rice in cold water and drain. Transfer to a saucepan with 300ml of cold water and leave to soak for 30 mins. Bring to the boil. Cover and simmer for 10-12 mins or until all the water has been absorbed. Remove from heat and leave covered for 10 mins before serving.
