1️⃣ Start with the batter: in a bowl, mix the milk, olive oil, eggs, and salt.

3️⃣ In a non-stick pan, pour 1 heaping tablespoon of the batter, add 1 slice of cheese, 1 tsp cream cheese, chopped or sliced Florina pepper (ideally lightly roasted), and cherry tomatoes. Continue with the 2nd slice of cheese and cover with another tablespoon of the batter, as shown in the video.
4️⃣ Cook for 3–4 minutes on one side, flip, and cook for another 3–4 minutes until golden brown.
5️⃣ Serve hot, and if you like, top with an extra fried egg 🍳, a drizzle of olive oil, and freshly ground pepper.
