Ingredients:
500g organic pumpkin
2 cloves organic garlic
5 tbsp organic extra virgin olive oil
250g of organic durum wheat orzo
750g water
150g organic goat cheese
parsley salt & pepper
Preparation:
Cut the pumpkin into small cubes and finely chop 1 onion and the garlic.
Put them in a deep pan with olive oil (3 tbsp), season with salt and pepper and sauté on medium heat for 10 minutes.
Lower the heat and let it cook for another 10-15 minutes, after adding a little hot water.
Once the pumpkin is completely soft, transfer the contents of the pan to a mixer and beat until creamy.
Put the olive oil (2 tbsp) in a saucepan and let it heat up on medium heat. Add 1 onion and sauté for 3-4 minutes. Add the orzo and sauté for another 2-3 minutes.
Add ⅓ of the water and stir constantly until it is absorbed. Continue with the rest of the water in 2 doses.
When the orzo is ready, add the pumpkin cream and let it cook on low heat for 3-4 minutes, stirring constantly.
Add the goat cheese and parsley and serve.
