Ingredients for the meatballs:
• 1 cup cooked organic lentils
• 1/2 cup organic oats
• 1/4 cup organic finely chopped onion
• 2 cloves organic garlic
• Salt, pepper
• Spices (oregano, thyme)
• 2-3 tablespoons organic flour for binding
Ingredients for the pepper sauce:
• 1 organic red pepper
• 1 tablespoon organic extra virgin olive oil
• Juice of an organic lemon
• Salt, pepper
Instructions:
For the meatballs: Mix the cooked lentils, oats, onion, garlic, spices, and salt/pepper. If needed, add flour to bind the mixture.
Shape the mixture into small meatballs and fry in hot olive oil until they brown and become crispy.
For the pepper sauce: Roast the pepper and transfer it to a blender with the olive oil, lemon juice, salt, and pepper. Blend until smooth.
Serve the meatballs with the pepper sauce.
