Preheat the oven:
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Mix the dry ingredients:
In a large bowl, combine the oats, whole wheat flour, baking soda, salt, and cinnamon (if using).
Mix the wet ingredients:
In another bowl, whisk the egg with the honey and olive oil (or coconut oil). If desired, add the vanilla powder.
Combine the ingredients:
Add the wet mixture to the dry ingredients and stir well until a dough forms. If you like, you can add the nuts or raisins to the mixture for extra flavor and texture.
Shape the cookies:
Scoop small spoonfuls of dough and place them on the baking sheet. Gently press them down with the back of a spoon or your fingers to flatten them.
Bake:
Bake for about 10-12 minutes, or until the cookies are golden brown and have a light crust around the edges. Let them cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely.
Serving:
These cookies are perfect for breakfast or an afternoon snack and can be stored in an airtight container for several days.
