Ingredients:
½ tsp organic baking soda
½ tsp sea salt
½ tsp organic oregano
200ml organic yogurt (or gluten-free plant-based yogurt)
50ml organic olive oil
150g organic feta cheese (or another firm cheese of your choice, crumbled)
Optional: 30g organic grated yellow cheese for extra flavor
Instructions:
Preheat the oven to 180°C (350°F) with fan.
In a bowl, mix the gluten-free flour, baking powder, baking soda, sea salt, and oregano.
In another bowl, whisk the eggs with the yogurt and olive oil.
Add the wet ingredients to the dry ingredients and mix well until combined.
Fold in the crumbled feta cheese (and grated yellow cheese if using).
Transfer the mixture into a well-greased or parchment-lined loaf pan.
Bake for 40–45 minutes, until the bread rises and turns golden brown. Test with a knife; it should come out clean.
Let it cool for 15 minutes before slicing (if you can wait!).
💡 Tips:
It tastes great warm with a little organic butter.
You can add finely chopped olives or sun-dried tomatoes for extra flavor!
Store in a bag or airtight container for 2–3 days, or freeze in slices.
