Two components of artichoke, quinarin and scolymoside, have been shown to stimulate bile secretion, which is consistent with its traditional use in treating incomplete digestion. Cynarin has been shown to lower blood cholesterol and triglyceride levels. Artichoke can protect the liver from the harmful effects of alcohol while helping to metabolize fatty foods.
