Ingredients:
100g organic cow butter
4 organic eggs, separated
1 1/2 tbsp liquid sweetener with stevia
125g organic yogurt strained
150g organic ground walnut
50g Green Village organic dried plum cubes
1 tbsp organic cinnamon
salt
Preparation:
Peel the apples.
Cut one into small cubes and the other into very thin slices for the surface of the apple pie.
Separate the yolks from the white.
Butter and line non-stick paper in a mold with a removable base of 23 cm.
Preheat the oven to 160ºC in the air.
Beat the egg whites with the salt with a hand mixer at medium speed for 2-3', until it becomes a meringue.
Put the butter in a bowl and add the yogurt, liquid sweetener with stevia, egg yolks and cinnamon. With a wire, mix the ingredients to homogenize.
Add to the mixture, the ground walnut, the chopped apple, the dried plum in cubes and mix the ingredients with a spatula.
Add the meringue gradually and fold the mixture with a spatula. When the mixture is homogenized, pour it into the prepared form.
Place the thin apple slices on the surface of the apple pie.
Place the cake on the middle rack in the hot oven and bake for 40 minutes, until a knife inserted in the center of the cake comes out dry.
Let the apple pie cool in the pan.
Unmould and cut into pieces.
