Ingredients (for 3 servings) 🧺
✔️ Organic arugula (or any green leafy vegetable you prefer) (125g) 🌿
✔️ Organic salmon fillets (2 pcs, 250g raw) 🐟
✔️ Organic orange (1 pc) 🍊
✔️ Organic kiwi (2 pcs) 🥝
✔️ Organic avocado (1 small) 🥑
✔️ Organic walnuts (4 halves) 🌰
✔️ Organic Goji berries Green Village (1 tbsp)
✔️ Organic pine nuts Green Village (1 tbsp)
✔️ Organic Florina red pepper rings (optional)
For the dressing 🥣
✔️ Organic extra virgin olive oil (2 tbsp)
✔️ Organic lemon juice (1 tbsp)
✔️ Organic mustard (1 tbsp)
✔️ Organic honey (1 tsp) 🍯
✔️ Organic chopped dill (1 tbsp) (optional)
Preparation 👩🍳
1️⃣ Bake the salmon fillets for 20–30 minutes (depending on how juicy you prefer them) with a little olive oil, salt, pepper, and garlic powder.
2️⃣ In a large bowl, add the arugula leaves, diced avocado, goji berries, and pine nuts.
3️⃣ Add orange slices and pieces of kiwi for an extra boost of vitamin C 🍊🥝
4️⃣ For the dressing, mix the olive oil, lemon juice, mustard, honey, and dill. Pour over the salad and toss well.
5️⃣ Serve with the salmon fillets on top and, optionally, garnish with red pepper rings for extra color and vitamin C 🌈
