Ingredients for Homemade Seitan “Fillets”:

• 25g (1 heaped tbsp + 1 level tbsp) organic wheat protein
• 1/4 cup organic nutritional yeast (for flavour)
• 1 tsp garlic powder & 1 tsp onion powder
• 3/4 cup vegetable stock (cold)
• 2 tbsp soy sauce (tamari or regular)
• 1 tbsp olive oil (for frying)

Ingredients:

• 4-5 organic seitan fillets 
• 1 cup organic mushrooms (sliced)
• 1 organic garlic clove (finely chopped)
• 1/2 cup organic dry white wine (optional, alternatively use vegetable broth)
• 1/2 cup organic vegetable broth
• Juice of 1 organic lemon
• 1 tbsp organic cornstarch (dissolved in 2 tbsp cold water)
• Salt, organic pepper and fresh organic parsley

Method for Homemade “Fillets”:

1. In a bowl, mix the dry ingredients: wheat protein, nutritional yeast, garlic powder and onion powder.
2. In a separate container, mix the wet ingredients: vegetable stock and soy sauce.
3. Pour the wet ingredients into the bowl with the dry ingredients and quickly mix with a spatula until a firm, elastic dough forms.
4. Knead the mixture with your hands for 2–3 minutes (no longer, to prevent it from becoming too tough).
5. Cut the dough into thin slices or bite-sized pieces.

Instructions:

1. Heat a little olive oil in a large frying pan and brown the seitan fillets for 2–3 minutes on each side. Remove them from the pan and set aside on a plate.
2. In the same pan, add the mushrooms and garlic and sauté until the mushrooms release their juices and soften.
3. Deglaze the pan with the wine (or vegetable broth) and allow the alcohol to evaporate for 1–2 minutes.
4. Add the vegetable broth, lemon juice, salt and pepper.
5. Return the seitan fillets to the pan, reduce the heat and simmer for 5 minutes so they can absorb the flavors.
6. Add the dissolved cornstarch and stir gently for 1–2 minutes, until the sauce thickens and becomes velvety.
7. Sprinkle with fresh parsley and serve with mashed potatoes or a green salad.
