Ingredients:
75g organic cow's butter, at room temperature
150g organic coconut sugar
3 organic eggs, medium
150g organic strained yogurt
juice of 2 organic oranges
2 organic pears
100g organic all purpose flour
100g organic corn flour
2 tbsp baking powder
Preparation:
Preheat the oven to 200°C in the air.
Butter and flour a 13x25 cm mold and set aside.
In a bowl, mix the butter with the coconut sugar with a whisk.
Add the eggs one by one, waiting for the first one to be absorbed, before adding the next while mixing with the whisk. Then, pour the yogurt and orange juice into the bowl.
Peel and pit the pears and cut them into cubes. Put the pears, all purpose flour, corn flour, baking powder in a bowl and mix.
Pour the mixture with the pears into the bowl with the rest of the ingredients and mix until you have a uniform mixture.
Pour the mixture into the mold and bake for 30 minutes.
Remove the form from the oven and leave on a wire rack for 30 minutes until it cools. Unmold and let the cake cool completely.
