✔️ Organic onion, finely chopped (1 piece)
✔️ Organic mushrooms, sliced (250g)
✔️ Organic veal (top round) Green Village, thinly sliced or in small pieces (500g)
✔️ Cognac (80ml)
✔️ Lukewarm water (100ml)
✔️ Organic bay leaves (2 pieces)
✔️ Organic mustard (1 tbsp)
✔️ Organic light cream (150ml)
✔️ Salt
✔️ Organic pepper
✔️ Organic parsley, finely chopped (2 tbsp)
1️⃣ Sauté the onion and mushrooms with half of the olive oil and set aside.
2️⃣ In the same pan, add the veal and the remaining olive oil. Cook over medium heat for 3–5 minutes until browned on all sides. Deglaze with the cognac and let the alcohol evaporate.
3️⃣ Add the water, mustard, bay leaves, salt, and pepper, and mix well.
4️⃣ Return the mushrooms and onions to the pan and cook for another 5–7 minutes (make sure the meat is fully cooked).
5️⃣ Add the cream and once it comes to a good boil, remove from heat. Let it rest for 10 minutes so the sauce thickens.
You can choose any cut of meat you prefer. Chuck or shoulder cuts are ideal for an even juicier result!
