Ingredients for the composition:
4 tbsp organic extra virgin olive oil Green Village
200g organic groats
200g of water
3 organic leeks
1 clove Organic garlic
3 tbsp organic pine nuts
170g organic chestnuts, boiled
60g organic balsamic vinegar
salt
pepper
Ingredients for serving:
1/4 organic bunch of mint
1/2 organic bunch of parsley
lemon zest, from 1 organic lemon
80g organic feta cheese
3 tbsp organic pomegranate seeds
2 tbsp Green Village organic raw almond flakes
2 tbsp organic cashew Green Village
Pepper
2 tbsp organic extra virgin olive oil Green Village
Preparation:
Place a pan on high heat and add 2 tbsp. olive oil.
Add the groats and sauté for 2-3 minutes to color it.
Add the water, salt, pepper and let it boil.
Cover with a lid, remove from heat and set aside until all the water is absorbed.
Cut the leeks into slices.
Place a pan on high heat and put 2 tbsp. olive oil.
Put the leeks in the pan and sauté.
Add the chopped garlic, salt and pepper and let them caramelize.
Add the pine nuts, the broken chestnuts and mix.
Deglaze with the balsamic vinegar.
Put the groats in the pan and mix.
Serve with chopped mint and parsley, lemon zest, grated feta cheese, pomegranate seeds, almonds, cashews, olive oil and pepper.
