The presence of bran reduces gluten production and as a result products made from whole wheat flour tend to be heavier and coarser than those made from white flour. Whole wheat flour is rich in B-vitamins, vitamin E and protein, and contains more trace elements and fiber than white flour.
It is ideal for making traditional country bread, it gives a nice aroma, dense texture and dark color. Also for pies, hand-rolled puff pastry, nuts and general durum wheat wholemeal pastries.
