Kritamo or krithamos got its name from the ancient Greeks who, wanting to show the similarity that the seeds of the plant have with barley, called it "krithmon". Even today, as in ancient Greek cuisine, Kritamo is served in coastal areas, usually under the name "armyra". With a rich aromatic and salty taste, kritamo is traditionally served with olive oil and lemon. It is considered the ideal appetizer for ouzo and tsipouro, it gives a special flavor to the country style, potato salad and omelette, while it can also be used as a base for the preparation of various dishes.
