Ingredients for the composition:
200g organic lentils
100g organic chickpeas
100g organic black-eyed peas
1 organic carrot grated
100g organic rocket, chopped
1 medium organic onion, diced
1 organic red pepper, cut into small squares
1 organic green pepper, cut into small squares
2 tbsp organic parsley, chopped
5 tbsp organic white vinegar
3 tbsp organic olive oil
salt
organic black pepper
Preparation:
Place the lentils and black-eyed peas in a medium pot with water and the chickpeas in a second pot and let them boil until they soften.
The lentils and black-eyed peas take about half an hour and the chickpeas one hour.
When the pulses are ready, turn off the heat, drain them and pour plenty of cold water.
Put them in a big bowl.
Mix with a wooden spoon and add the rest of the ingredients, leaving the parsley and rocket last.
Add salt, pepper, oil and vinegar.
