Ingredients:
For the marinade
2 tbsp organic extra virgin olive oil Green Village
20g salt pepper
1 tbsp organic oregano, dry lemon juice, from 1 organic
lemon lemon zest, from 1 organic lemon
4kg organic rosemary
2 tbsp organic mild mustard
4 sc. organic garlic
For the lamb
2kg organic leg of lamb, cut into portions
2 organic dry onions
2 organic carrots
2 organic potatoes
150g organic white wine
2 tbsp organic extra virgin olive oil Green Village
1 tbsp organic thyme honey
150g organic cephalosporin
Preparation:
For the marinade
Put the meat in a large bowl and add the extra virgin olive oil, salt, pepper, oregano, lemon juice and zest, rosemary, mustard and chopped garlic. Mix well and cover the bowl with cling film. Transfer the bowl to the refrigerator for 2-6 hours.
For the lamb
Preheat the oven to 160°C in the air. Cut the onions, carrots, potatoes and peppers into large pieces, and put them in a pot. Add the wine, extra virgin olive oil and thyme honey, and mix. Place the lamb with its marinade on top of the vegetables. Cut the kefalotiri into cubes and place it on top of the meat. Cover the meat with parchment paper and bake in the oven for 3-3 1⁄2 hours, until the meat is tender.
Serve with pepper, oregano and rosemary.
