Autumn Organic Pumpkin Salad

For the salad:

For the dressing:

  1. 2 tbsp organic extra virgin olive oil Green Village
  2. 1 tbsp Green Village thyme honey
  3. organic orange juice, from 1 orange
  4. organic orange peel, from 1 orange
  5. organic lemon juice, from 1/2 lemon
  6. organic black pepper
  7. salt

For the composition:

  1. 200g organic quinoa, boiled
  2. 20g Green Village organic cranberry
  3. 20g Green Village organic dried fig in cubes
  4. 10g Green Village raw pumpkin seed crumbs
  5. 1 organic spring onion
  6. ½ bunch fresh organic parsley
  7. 10g dried organic basil

 

Preparation:

  1. Preheat the oven to 180°C in the air.
  2. Cut the pumpkin into small pieces and put them in a pan, in which we have placed oil pans.
  3. Add olive oil, salt, pepper, oregano and mix.
  4. Bake for 15 minutes.
  5. In a bowl, add olive oil, honey, orange and lemon juice, salt, pepper and mix well with a spoon.
  6. Put the zest from the orange, quinoa, pumpkin, cranberry, fig, pumpkin seed, chopped parsley, chopped spring onion and basil into the serving dish.
  7. Mix very well and serve.
