For the salad:
300g organic pumpkin
2-3 tbsp. organic extra virgin olive oil Green Village

For the dressing:

1 tbsp Green Village thyme honey
organic orange juice, from 1 orange
organic orange peel, from 1 orange
organic lemon juice, from 1/2 lemon

For the composition:
200g organic quinoa, boiled
20g Green Village organic cranberry
20g Green Village organic dried fig in cubes
10g Green Village raw pumpkin seed crumbs
1 organic spring onion
½ bunch fresh organic parsley
10g dried organic basil
Preparation:
Preheat the oven to 180°C in the air.
Cut the pumpkin into small pieces and put them in a pan, in which we have placed oil pans.
Add olive oil, salt, pepper, oregano and mix.
Bake for 15 minutes.
In a bowl, add olive oil, honey, orange and lemon juice, salt, pepper and mix well with a spoon.
Put the zest from the orange, quinoa, pumpkin, cranberry, fig, pumpkin seed, chopped parsley, chopped spring onion and basil into the serving dish.
Mix very well and serve.
