In 550g flour (not rye flour) add 1 tablespoon salt and 500ml semi cold water. Mix the product with 350ml water and add 300g flour. Cover it and leave it to raise for 12 hours in 30-35οC. Add 150 ml water and 150g flour and mix. Leave it covered in hot temperature for 5-8 hours. Then, add 100g flour and salt, place in the pan and leave in fro 2 hours. Bake in 180οC for 60 minutes.
