Ingredients:
4 tbsp organic extra virgin olive oil
1 organic dry onion
500g organic pumpkin, peeled without seeds
400g organic sweet potato, peeled
orange zest, from 2 organic oranges
orange juice, from 2 organic oranges
2 sc. organic garlic
1 tbsp organic ginger, powdered
2 tbsp organic nutmeg, powdered
850g water
salt
organic black pepper
Preparation:
Put 3 tbsp olive oil in a saucepan over medium heat.
Cut the onion into slices and sauté it in the pot for 5 minutes until caramelized.
Cut the 400g pumpkin and sweet potato into small pieces of 2 cm and put them in the pot.
Sauté for another 5 minutes.
Add the zest and juice of the oranges, garlic, ginger, 1 tbsp nutmeg, salt and pepper. Pour the 850g water with the vegetable cube and lower the heat.
Simmer for 25 minutes until the vegetables are soft. Stir from time to time.
Remove from the heat and with a blender, beat the soup until it acquires a fluffy and smooth texture.
