Healthy Muffins with Blueberries

Ingredients

Method 

  1. Preheat the oven to 180o C.
  2. In a mixer add and mix the vegetable milk with the apple cider vinegar for 5 minutes.
  3. In a bowl, mix all the solids together with the liquid ingredients until well combined.
  4. Add the blueberries and mix the mixture with a spatula.
  5. In a silicone mold for muffins place the mixture with a spoon in 6 muffins trays.
  6. Bake for 20-25 minutes until the muffins take on a light golden color. Use the knife technique to make sure you are baking. Place a knife in the center of the muffin and when you remove it the knife should be clean.
